Chia seeds have been coined a ‘superfood’ due to their high nutrient value. One tablespoon of chia will provide you with 3g of omega-3 ALA and 6g of dietary fibre, along with a range of other important vitamins, minerals and antioxidants. They can increase energy; improve digestive, brain, heart and skin health, while also helping to manage blood sugar levels.I have developed an easy breakfast recipe that you can whip up the night before and take on the go in the morning.
Vanilla chia pudding recipe
- 1/3 cup chia seeds
- 1/2 cup water
- 1 cup almond or coconut milk
- 1/2 tsp vanilla essence
- 1 tbsp raw honey or maple syrup
Whisk chia seeds with water and let stand for 1 minute so seeds thicken. Stir in honey and vanilla, once combined add almond milk and mix until smooth. Pour into small glass jars or bowls. Set in fridge overnight and top with fresh fruit, coconut yoghurt, granola or toppings of choice. I have used fresh blueberries as sown above!
Hint: For a chocolate version, simply add 1 tbsp of raw cacao powder to mix.
